Purge the clams

Purge the clams

Soak the clams in a bowl of cold water with the coarse salt for about 1 hour; this makes them spit out any sand hidden inside. Scrub the shells under running water and tap any clam that is open: if it does not close, throw it away.

  • 1 kg clams
  • 2 tbsp coarse salt

✅ C'est prêt quand : the clams are clean, grit-free, and all tightly shut or close when tapped

Start the pasta

Bring a large pot of water to a boil and salt it well. Add the spaghetti and cook for 2 minutes less than the packet says, since it will finish cooking in the sauce later.

  • 400 g spaghetti
  • to taste salt

✅ C'est prêt quand : the pasta is very al dente, still slightly chalky in the center when bitten

History & Culture

The Story Behind the Dish

📍 Naples, Campania📅 19th–20th century🍝 IT

Spaghetti alle vongole grew out of the cucina povera of the Bay of Naples, where fishermen and dockworkers had cheap pasta on hand and small clams pulled straight from the sea. Garlic, olive oil and a splash of wine turned humble ingredients into something that tasted far richer than it cost.

The rule that took hold in Naples, no cheese on seafood pasta, comes from this dish: the briny clam liquor is the only seasoning the sauce needs, and dairy would only mask it.

⭐ Why It's Famous

It is loved for being deceptively simple: a handful of ingredients, cooked fast, that deliver pure sea flavor without ever feeling heavy.

💡 Fun Fact

In Italy, serving grated cheese alongside a seafood pasta like this one is considered a kitchen faux pas, almost everywhere you will not even find a cheese shaker on the table.
