Prep the vegetables
Dice the onions, peppers and zucchini separately into small, even pieces, about 1 cm. Peel and dice the tomatoes, or have the canned crushed tomatoes ready. Keeping the vegetables separate until needed lets each one cook properly without turning to mush.
- 2 large onions
- 2 green peppers
- 1 red pepper
- 3 medium zucchini
- 1 kg tomatoes

Soften the onion and peppers
Heat the olive oil in a wide, heavy pot or deep pan over low heat. Add the onions and both kinds of pepper with a pinch of salt and cook gently for 15 minutes, stirring now and then, until soft and sweet but not browned. Low, slow heat here is what gives pisto its deep, rounded flavor instead of a sharp raw-vegetable taste.
- 100 ml olive oil
- 2 large onions
- 2 green peppers
- 1 red pepper
- a pinch salt
✅ C'est prêt quand : the onion and peppers are soft, pale and translucent, with no raw bite left

The Story Behind the Dish
Pisto grew out of the simple vegetable gardens of La Mancha, a dry, high plateau where onions, peppers, zucchini and tomatoes thrived in the hot summers. Once tomatoes and peppers crossed the Atlantic and settled into Spanish kitchens, cooks began stewing them slowly with the local garden vegetables in olive oil, a technique already used for older vegetable dishes.
It became a staple of humble, resourceful country cooking, meant to use up whatever the garden gave in abundance, and to stretch simply through the week. Today it is served across Spain, often with a fried egg or a slice of bread, but it remains most closely tied to its home region.
⭐ Why It's Famous
It's prized as the purest expression of Spain's garden vegetables, cooked low and slow until their flavors turn deep, sweet and concentrated, with nothing to hide behind.
💡 Fun Fact
Pisto is often compared to the French ratatouille, but it predates that dish's modern popularity and uses a simpler, more rustic method, with everything simmered together rather than layered.
