Soften the leaves

Soften the leaves

Pass each banana leaf quickly over an open flame or a hot stovetop burner for a few seconds per side, moving it constantly, until it turns glossy and bends easily instead of cracking. Wipe both sides clean with a damp cloth.

✅ C'est prêt quand : the leaf is deep green, shiny, and folds without tearing

Season the fish

Season the fish

Rinse the fish and pat dry, then cut 2–3 shallow diagonal slashes into the flesh on each side so the seasoning reaches the bone. Rub well inside and out with lime juice, salt and garlic, and let it sit while you prepare the vegetables.

  • 4 whole fish
  • 2 limes (juice)
  • 1 tbsp salt
  • 4 cloves garlic

History & Culture

The Story Behind the Dish

📍 Peruvian Amazon (Loreto region, around Iquitos)📅 Pre-Columbian Amazonian tradition, still practiced today🐟 PE

Along the rivers of the Peruvian Amazon, fishermen and riverside communities have long cooked their catch the same day it was pulled from the water, wrapping it in bijao leaves and grilling it over an open fire on the riverbank. The leaf acts as a natural steamer and seasoning envelope, keeping the fish moist while the smoke and charred leaf give it a deep, earthy flavor.

Traditionally the fish is one of the Amazon's own species, such as doncella, paco or boquichico, and the stuffing is whatever onion, tomato, chili and wild herbs are at hand. Today patarashca is a signature dish of Loreto's markets and riverside restaurants, usually served with boiled yuca, rice or fried plantain.

⭐ Why It's Famous

It captures the Peruvian Amazon in one dish: river fish, local herbs and chili, cooked the ancestral way in a leaf over fire, smoky and intensely flavorful without a single sauce added from outside.

💡 Fun Fact

In the Amazon, the word "patarashca" is sometimes used more broadly for any food grilled wrapped in leaves, not only fish.
