Masala Dosa (Crêpe Croustillante Farcie)
Le joyau du sud de l'Inde : une immense crêpe fine et dorée de riz et lentilles fermentés, garnie d'un masala de pommes de terre au curcuma.

Grind and ferment
Grind the soaked urad dal and fenugreek with a little cold water to a light, fluffy paste. Grind the rice separately to a slightly grainy batter. Mix both with the salt, cover and leave in a warm place for 8–12 hours until bubbly and nearly doubled.
Make the potato masala
Heat the oil, pop the mustard seeds, then add the chana dal, curry leaves, onions, chilies and ginger. Cook until the onions are soft, add the turmeric, potatoes, 1 tsp salt and 60ml water and mix until it comes together.
Thin the batter
Stir the fermented batter and add water until it flows like thick cream.
Spread the dosa
Heat a large cast-iron or non-stick pan over medium-high heat and wipe with an oiled cloth. Pour a ladle of batter in the centre and immediately spread it outward in a spiral with the back of the ladle into a thin 25cm circle.
Crisp and fill
Drizzle a little oil around the edges and cook for 2–3 minutes until the underside is golden and crisp. Place a spoonful of potato masala in the centre, fold or roll, and serve at once with coconut chutney and sambar.

The Story Behind the Dish
Fermented rice-and-lentil pancakes have been eaten in South India for many centuries. The masala dosa — filled with spiced potato — is most often credited to the temple town of Udupi in Karnataka, whose vegetarian cooks spread the dish across India through their 'Udupi' restaurants.
Today it's one of India's most recognisable dishes and a favourite breakfast everywhere.
