History & Culture

The Story Behind the Dish

📍 Sendai and Tokyo📅 1930s🍜 JP

Hiyashi chuka ('chilled Chinese-style') is a Japanese creation: ramen noodles served cold for the hot, humid Japanese summer. Restaurants in Sendai and Tokyo both claim to have invented it in the 1930s.

When it appears on menus, Japanese people know summer has arrived.

⭐ Why It's Famous

Cool, tangy and colourful, it's the perfect lunch when it's too hot to eat anything warm.

💡 Fun Fact

Many Japanese restaurants hang a sign reading 'Hiyashi chuka hajimemashita' ('We've started serving hiyashi chuka') to announce the start of summer.
