The Story Behind the Dish
While western Cuba is famous for black beans, red beans (frijoles colorados) are especially loved in the centre and east of the island. They're also the beans used in congrí oriental, the red-bean rice of eastern Cuba.
Like other Cuban potajes, frijoles colorados are everyday food, cooked in big pots to last for days.
⭐ Why It's Famous
Creamy, smoky and sweet from the calabaza, it's a deeply comforting bowl.
💡 Fun Fact
Boiling kidney beans hard for 10 minutes isn't just tradition: it destroys a natural toxin in the raw beans.
