Prepare lamb and liver

Prepare lamb and liver

Pat the lamb chunks dry with paper towels and season with salt and pepper; dry meat browns much better than wet meat. If using the dried pepper, cover it with hot water and let it soften for 10 minutes, then scrape the soft flesh from the skin with a spoon.

  • 1.5 kg lamb
  • 150 g liver
  • 1 dried red pepper
  • to taste salt and pepper

✅ C'est prêt quand : the lamb is dry to the touch and well seasoned, and the dried pepper flesh is soft and scraped

Brown the lamb

Brown the lamb

Heat the olive oil in a large heavy pot over medium-high heat. Brown the lamb in batches, without crowding the pan, about 3-4 minutes per side, then remove to a plate. Browning in batches, not all at once, is what gives the sauce its deep colour and flavour.

  • 1.5 kg lamb
  • 80 ml olive oil

✅ C'est prêt quand : the lamb pieces are deeply golden-brown on all sides

The Story Behind the Dish

📍 Extremadura, Spain📅 Centuries-old shepherd tradition🍲 ES

Caldereta de cordero comes from Extremadura, a vast pastoral region in western Spain where sheep farming has shaped the land and the table for generations. Shepherds cooked it outdoors in a caldera, a large metal cauldron, over an open fire while tending their flocks, using lamb, peppers and whatever else was on hand.

Stirring in a little mashed liver near the end, instead of thickening the sauce with flour, is the dish's signature move. It reflects a frugal, whole-animal style of cooking and gives the sauce its deep, dark colour and rich flavour, a technique still followed closely in homes and village festivals across Extremadura today.

⭐ Why It's Famous

It is the flagship dish of Extremaduran cooking, prized for its deeply savoury, naturally thickened sauce and the way the lamb turns completely tender after slow cooking.

💡 Fun Fact

Many villages in Extremadura hold open-air caldereta cook-offs during spring festivals, preparing it outdoors in big metal cauldrons, which is where the dish gets its name.
