The Story Behind the Dish
Asopao, from 'asopado' (soupy), is Puerto Rico's take on the Spanish soupy rice dishes. Halfway between a stew and a soup, it's the dish Puerto Ricans make on rainy days, when someone is sick, or late at night after a party.
There are versions with chicken, shrimp, pigeon peas and even lobster, but chicken asopao is the most beloved.
⭐ Why It's Famous
Thick, warming and full of sofrito flavour, it's the Puerto Rican equivalent of chicken noodle soup.
💡 Fun Fact
Asopao thickens as it sits, so leftovers the next day are almost like a risotto, and many people prefer them.
