The Story Behind the Dish
Griddle cakes travelled to North America with European settlers and met Native American corn cookery along the way. American Cookery (1796), the first cookbook written by an American, already includes 'Indian slapjacks' made with cornmeal.
The fluffy wheat pancake we know today took off in the 19th century, once chemical raising agents such as baking soda and baking powder became widely available. Blueberries, native to North America, became the classic fruit to fold in.
⭐ Why It's Famous
The tall stack with syrup is the centrepiece of the American diner breakfast, and the eggless version shows that the rise really comes from the baking powder, not the eggs.
💡 Fun Fact
The vinegar isn't just for flavour: its acid reacts with the bicarbonate of soda and releases extra bubbles, so vegan pancakes rise just as well.
