Golden Tofu Scramble

Soft, golden crumbles of tofu cooked with onion, garlic, turmeric and a pinch of black salt for a real 'eggy' flavour, finished with wilted greens and chilli. A high-protein breakfast ready in about 20 minutes.

Crumble the tofu
Pat the tofu dry with a clean tea towel, then crumble it into a bowl with your fingers into uneven, bite-sized pieces — some bigger, some smaller, like scrambled egg.
Soften the onion
Heat the oil in a frying pan over medium heat and cook the onion until soft and lightly golden. Add the garlic and cook for 1 minute more.

The Story Behind the Dish
Tofu has been made in China for well over a thousand years, but it only reached most American kitchens in the 1970s, when vegetarian communities and cookbooks — notably those of The Farm in Tennessee and The Book of Tofu (1975) — showed home cooks how to use it.
Scrambled tofu quickly became the plant-based answer to scrambled eggs, and today it is a fixture of vegan cafés and brunch menus around the world.

💡 Fun Fact
