The Story Behind the Dish
Lassi is the traditional drink of Punjab's dairy farmers, drunk in big brass tumblers with breakfast or after a day in the fields. Amritsar is particularly famous for lassi so thick you can almost eat it with a spoon.
It comes sweet or salted; the salted version is often spiced with roasted cumin.
