The Story Behind the Dish

📍 Spain, adapted across Cuba and Latin America📅 Colonial era; canned milks from the 20th century🍮 CU

Flan came to Cuba from Spain, which in turn inherited caramel custards from Roman and medieval European cooking. In the 20th century, Cuban cooks adopted canned condensed and evaporated milk, which keep in the tropical heat and give the flan its dense, creamy texture.

Today flan is the most common Cuban dessert, served at birthdays, holidays and in every Cuban restaurant.

⭐ Why It's Famous

Rich, smooth and bathed in bittersweet caramel, it's simple to make and always impressive.

💡 Fun Fact

Many Cuban families cook flan in a special lidded mould called a 'flanera', sometimes in a pressure cooker on the stove instead of the oven.
