Steps

Make the caramel

Make the caramel

Spread the sugar in the flan mold (a metal mold with a lid, or a cake pan) and set it over medium heat on the stovetop. Let it melt on its own, tilting and swirling the pan instead of stirring, until it turns a deep amber color, then quickly swirl it to coat the bottom and a little up the sides before it hardens.

  • 200 g sugar

✅ Done when: the sugar is fully melted and deep amber, not pale and not smoking or black (that turns bitter)

Blend the custard

Blend the custard

In a blender, combine the eggs, condensed milk, evaporated milk, coconut milk, shredded coconut, vanilla and salt. Blend just until smooth and even, about 20–30 seconds; blending too long whips in air bubbles that leave holes in the baked flan.

  • 4 eggs
  • 1 can (397 g) condensed milk
  • 1 can (354 ml) evaporated milk
  • 240 ml coconut milk
  • 50 g shredded coconut
  • 1 tsp vanilla extract
  • 1 pinch salt

✅ Done when: the mixture looks smooth and uniform, with little surface foam

History & Culture

The Story Behind the Dish

📍 Cuba, island-wide📅 Colonial era to today🥥 CU

Flan arrived in Cuba with Spanish settlers, who brought the custard-and-caramel tradition from the Iberian Peninsula. Cuban cooks adapted it with what the island offered in abundance: coconut, grown along the coasts, and later canned condensed and evaporated milk, which became pantry staples across Cuban kitchens and in the diaspora.

Flan de coco became a fixture of Sunday lunches and birthday tables, often made a day ahead so it has time to chill and set properly.

⭐ Why It's Famous

It turns a short list of pantry ingredients into something that looks and tastes like a special occasion, with the coconut giving the classic flan a tropical, Caribbean twist.

💡 Fun Fact

In Cuban homes, the flan mold is often passed down through generations, and many cooks judge the caramel by sound and smell rather than a thermometer.
