Steps

Marinate the pork
In a bowl, mix the garlic, sour orange juice, oregano, 1 teaspoon of the salt and the pepper. Add the pork cubes, turn to coat well, cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.
- 900 g pork
- 6 cloves garlic
- 120 ml sour orange juice
- 1 tbsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
✅ Done when: the pork has marinated at least 1 hour and smells fragrant with garlic and citrus

Prep the potatoes
Cut the potatoes and drop them straight into a bowl of cold water; this rinses off extra starch so they fry crisp instead of soggy. Drain them well and pat completely dry with a towel before frying, since wet potatoes will spit in hot oil.
- 900 g potatoes
✅ Done when: the potato chunks are rinsed, drained and fully dry to the touch

The Story Behind the Dish
Carne frita con papas grew out of the everyday Puerto Rican kitchen, where pork is the backbone of countless dishes and sour orange trees grow in many backyards. Marinating meat in citrus and garlic before frying is a technique rooted in the island's Spanish and Taíno-influenced cooking, long used to flavor and tenderize before refrigeration made marinating less of a necessity.
It became a favorite at fritura stands, lechoneras and family tables alike, served simply with rice, beans or a salad, because it turns humble ingredients into something irresistibly crisp and savory.
⭐ Why It's Famous
It delivers big, bright flavor with a satisfying crunch, using everyday ingredients that every Puerto Rican pantry has on hand.
💡 Fun Fact
Many Puerto Rican homes still have a naranja agria tree in the yard, and cooks reach for its fruit instead of vinegar whenever they marinate meat.
