Spetzofai (Greek Sausage and Pepper Skillet)
Country sausage seared until deeply browned, then simmered with sweet peppers, onion and tomato in good olive oil until everything turns tender and the sauce turns rich. A rustic one-pan classic from the mountains of Pelion, eaten with plenty of crusty bread.

Steps

Prep sausage and peppers
Cut the sausage into thick diagonal pieces, about 2 cm. Slice the peppers into wide strips, discarding seeds and stems, and thinly slice the onion and garlic. Having everything cut before you start cooking keeps the pan moving quickly.
- 500 g sausage
- 6 sweet peppers
- 1 hot pepper
- 1 large onion
- 3 cloves garlic
✅ Done when: all the sausage, peppers, onion and garlic are sliced and ready beside the stove

Sear the sausage
Heat the olive oil in a wide, heavy skillet over medium-high heat. Add the sausage pieces and let them brown well on both cut sides without moving them too much; this browning builds most of the deep flavour in the dish. Lift the sausage out onto a plate; it does not need to be fully cooked yet, as it will finish later in the sauce.
- 60 ml olive oil
- 500 g sausage
✅ Done when: the sausage pieces are deeply browned on both sides
Soften the peppers

The Story Behind the Dish
Spetzofai comes from the mountain villages of Pelion in Thessaly, a region famous for its orchards, its country sausages, and its long green frying peppers that ripen sweet in late summer. Shepherds and farm families made it as a filling one-pan meal using whatever sausage and peppers they had on hand, cooked slowly in local olive oil over a wood fire.
The name is thought to echo Italian cooking words brought by Venetian traders along the Greek coast, hinting at a dish built from small, chopped pieces simmered together. Today it is a taverna favourite all over Greece, usually ordered as a shared starter with bread, though it makes an equally satisfying main course.
⭐ Why It's Famous
It turns humble country sausage and summer peppers into something rich and deeply savoury, with the sauce as important as the sausage itself.
💡 Fun Fact
In Pelion, cooks sometimes mix a few hot peppers in among the sweet ones, so every spoonful of spetzofai carries a small, unpredictable kick.
