Soto is the name for a whole family of Indonesian soups, and almost every city has its own. Soto ayam, with chicken and turmeric, is the most common across the country.

The soup is thought to have grown from Chinese noodle soups mixed with Javanese spices. It is eaten at street stalls from early morning until late at night.

Its golden broth is light but full of warm spice, and everyone adds lime and sambal to taste.
