Steps

Cook the rice

Cook the rice

Rinse the rice in a sieve until the water runs clear, then drain for 15 minutes. Cook it with the water in a rice cooker, or in a covered pot: bring to a boil, lower the heat and simmer 12 minutes, then turn off the heat and let it rest, covered, for 10 minutes without lifting the lid.

  • 450 g rice
  • 520 ml water

✅ Done when: all the water is absorbed and the rice is tender

History & Culture

The Story Behind the Dish

📍 All over Japan📅 Edo era🍱 JP

Chirashi means 'scattered'. Unlike the raw-fish chirashi of sushi bars, this home-style version mixes cooked ingredients into the rice and scatters colourful toppings on top.

It's the traditional dish of Hinamatsuri (Girls' Day) on 3 March, when families pray for their daughters' health and happiness.

⭐ Why It's Famous

Bright, festive and easy to share, it's sushi that anyone can make at home.

💡 Fun Fact

On Hinamatsuri, chirashi-zushi is often served with clear clam soup, because clam shells only fit their own pair, symbolising a good marriage.
