The Story Behind the Dish
Grilled meat on sticks was cooked in the Andes long before the Incas. In colonial times, enslaved Africans in Lima were given the offal the Spanish didn't want, such as beef heart, and they turned it into anticuchos, seasoned with chillies and vinegar.
Today, anticuchera stalls light up Lima's streets every evening, and anticuchos are part of every celebration, especially the October festival of El Señor de los Milagros.
⭐ Why It's Famous
Smoky, tangy and spicy, they are proof that humble cuts can become one of a country's most loved dishes.
💡 Fun Fact
Beef heart is lean and very tender when grilled quickly; many people who try anticuchos never guess it's offal.
