History & Culture

The Story Behind the Dish

📍 Japan📅 Edo period (18th century)🍢 JP

Agedashi tofu is so old that it appears in Tofu Hyakuchin, a famous cookbook of 100 tofu recipes published in 1782, which shows how central tofu already was to Japanese cooking.

Today it's a staple of izakaya menus: a soothing dish to share alongside grilled skewers and cold drinks.

⭐ Why It's Famous

The contrast of a crisp coating, a silky inside and a warm savoury broth makes simple tofu irresistible.

💡 Fun Fact

The bonito flakes on top seem to dance as the warm broth's steam makes them curl and wave.
